Chocolate Peanut Brittle Baked Doughnuts

Father’s Day always brings back fond memories. My dad was a huge fan of the classic sugar-dusted, peanut-coated doughnuts. Flash forward 20-something years: I’ve learned just how easy it is to make his favorite doughnut at home! Not only are these Chocolate Peanut Brittle Doughnuts oven baked, but I’ve also decreased the added sugar by using a crunchy, fiber-filled Nuts & SpicesThe Honey Roasted Almond flavor tastes just like a crunchy peanut brittle, but has 50 percent less sugar. COCOA PEANUT BRITTLE BAKED DONUTS

Serves: 12 donuts
INGREDIENTS
  • ¼ packed light brown sugar
  • ⅓ cup sugar*
  • ¼ cup maple syrup
  • 3 tablespoons light vegan margarine
  • ¼ cup liquid egg whites
  • ¾ cup + 1 tablespoon coconut Greek yogurt, divided
  • ¾ cup milk of choice + 3 tablespoons
  • 1 tablespoon vanilla extract
  • 1¼ cups sifted whole wheat flour
  • ¼ cup powdered peanut butter
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt
  • ¼ cup powdered sugar
  • 1 peanut nut bar, chopped*
INSTRUCTIONS
  1. Preheat oven to 375* F.
  2. In a large bowl, combine brown sugar, sugar, maple syrup, margarine, egg whites, vanilla yogurt, milk and vanilla.
  3. Using an electric mixer, beat on medium speed for 2-3 minutes. Set aside.
  4. On a sheet of wax paper, sift the white whole wheat flour. (Make sure to measure out flour first then sift).
  5. Combine sifted flour to the large bowl with other ingredients. Do not mix yet!
  6. Add peanut powder, cocoa powder, baking powder, baking soda, and salt.
  7. Now, mix on medium speed with your electric mixer for 3-4 minutes.
  8. Spray a donut pan with cooking spray.
  9. Pour batter into a large ziplock bag, cutting a small hole in the corner of the bag.
  10. Fill donut pan with batter.
  11. Bake for 12-14 minutes. Remove and let cool on a wire rack.
  12. Repeat again for remaining batter.
  13. Allow donuts to cool on wire rack.
  14. To make frosting, mix 1 tablespoon yogurt, 3 tablespoons of milk and powdered sugar in small bowl.
  15. Drizzle over top of donuts and top with chopped nut brittle (aka granola bar pieces)!
